Meatloaf

Ingredients
1 pound lean ground beef
1 (6-ounce) can tomato paste
1/2 cup chopped Vidalia onion
1/2 cup chopped green bell pepper
1/2 cup quick-cooking oats
1 egg, lightly beaten
1 teaspoon salt
1/4 teaspoon pepper
1/3 cup ketchup
2 tablespoons packed light brown sugar
1 tablespoon Dijon mustard
Directions
Preheat the oven to 375 degrees F.
In a large bowl, combine the ground beef, tomato paste, onions, green pepper, oats, egg, salt, and pepper. Shape the mixture into a loaf and place it in a 9 by 5-inch loaf pan.
In a small bowl, whisk together the ketchup, brown sugar, and mustard. Slather the glaze on top of the meat loaf and bake until the meat loaf is firm and cooked all the way through, about 1 hour. Serve hot.

HAWAIIAN MEAT BALLS WITH RICE
INSTRUCTIONS:
½ cup evaporated milk
2# hamburger
½ c chopped onions
2 eggs
2/3 c bread crumbs
Salt and pepper
Combine these ingredients, form into balls (small)
Brown in fry pan
½ cup medium chunk pineapple
2 cups pineapple juice and water
4 Tbsp cornstarch
½ cup vinegar or less
½ cup brown sugar
4 Tbsp soy sauce
½ tsp ginger
1 green pepper
Cut pepper into long strips, mix juice and corn starch, vinegar, brown sugar, soy sauce and ginger. Hit till thick and clear.
Now add pineapple and green pepper. Simmer cooked balls with sauce for a few minutes.
Serve over cooked rice. 10 servings

Sweet and Sour Meatballs
Here's a basic meatball recipe: (or you can use your own favorite or buy them)
Note: I didn't use this recipe comment if you do on what you think.
1 pound ground beef
1 egg
1/4 cup dry bread crumbs
1 onion, diced
Sauce:
1 cup packed brown sugar
3 tablespoons corn starch or all-purpose flour
1 1/2 cups water
1/4 cup distilled white vinegar
3 tablespoons soy sauce
1 T ketchup (optional)
1 tsp minced garlic (optional)
DIRECTIONS
1. In a medium bowl, combine the ground beef, egg, bread crumbs and onion. Mix thoroughly and shape into golf ball-sized balls.
2. In a large skillet over medium heat, gently brown the meatballs and set aside. (you could also bake them)
In a large saucepan, combine the brown sugar, cornstarch, water, white vinegar, soy sauce, and ketchup. Mix thoroughly. Add meatballs and bring to a boil. Reduce heat and simmer, stirring often, for 30 minutes.
We served over rice. You could probably use the sauce with chicken too.

Shepherds Pie
1 can green beans
1-2 cans tomatoe soup (i use 1 but you can use 2 for more saucy casserole)
2-3 cups mashed potatoes (left over from sunday are my favorite)
chees to top
Combine hamburger and beans in 9x13 pan, pour tomatoe soup over top and then the mashed potatoes.
bake @350 for 20-25 min, top with cheese
Taco Soup
1-1 1/2 lbs hamburger browned
1 can chilie con carne
1 can corn (undrained)
2 cans diced or stewed tomatoes
1 8oz can tomatoe sauce
1/3 cup taco seasoning (more or less)
heat in crockpot, serve with :
cheese, sour cream, and tortilla chips or friotos (chilie kind are good)
Tator Tot Casserole
1 can crm of mushroom soup
1 can beans
1 lb hamburger cooked and drained
salt and pepper to taste (if desired)
1 sm can mushrooms (optional)
1/8 cup milk
combine and put in baking dish (9x13)
top with tator tots and bake at 350 for 30-40 min top with cheese last few minutes

Easy Lasagna
9 noodles-cooked
1 lb browned hamburger w/sm onion (onion optional)
2-3 cups mozzarella cheese
1 bottle Prego w/meat
1/2 cup sour cream
1/2 cup cottage cheese
combine sauce, sour cream, cottage cheese and hamburger
layer noodles, meat mixture, and cheese 3x
Bake @ 350 for 30-40 minutes covered
