Old Fashioned Fudge

This is a recipe from one of my good friends who makes the best candy ever! Ashlyn won a contest for this fudge on ksl! YUMMY!

Ingredients:
1 stick butter, divided
4 cups sugar
3 oz unsweetened chocolate
¾ cup evaporated milk
¼ cup water
2 tbsp. Karo syrup
Method:

1. In a large, heavy pot place 1/2 stick of butter and put the other half on a large marble slab. Place the chocolate in the pan with the butter and melt.

2. To the melted ingredients add the milk, water and Karo. Stir till combined and add sugar.

3. Heat fudge on med-high stirring constantly until it comes to a boil. Once fudge begins to boil, remove spoon and do not stir again. Place a candy thermometer in and cook until fudge reaches 232 degrees.

4. Pour out on marble slab pouring over butter. (Do not scrape sides or bottom of pan).

5. Let fudge cool until it's cool to the touch. With a large putty knife work fudge. Working and kneading until it becomes creamy and smooth.

6. Store in an air tight container.

Oreo Truffles


1 box 18 0z Oreos
1 pkg 8 oz cream cheese softened
4-5 oz melted (semi-sweet) chocolate

Crush oreos, (reserve 1/2 cup or so) combine the rest with cream cheese, roll into balls, dip in chocolate, top with reserved oreos. Place on wax paper to cool. I thought these were better cold so I'd say refrigerate.

Mint Chocolate Cookies

2 boxes chocolate cake mixes
1 box brownie mix
3 eggs
3/4 cup oil
3/4 cup water
3 packages Andes mints


Batter wil be stiff. Bake at 350 degrees for 9-12 minutes on greased cookie sheet.(I didn't grease mine and it seemed fine) Put a mint candy on the hot cookies and spread when melted.

White Chocolate Popcorn

bag of popcorn- popped
2-3 oz of white chocolate melted
3/4-1 cup m&m's

pretty self explanatory
Pop as many bags of popcorn as you need/want. Next I sift it so you don't have the seeds, pour melted chocolate (about 2-3 oz per popped bag of popcorn), add m&m's and then I dump on wax paper to cool.

Super Yummy Chocolate Cake

1 Chocolate Fudge Cake Mix
1 sm chocolate instant pudding
1/2 cup sugar
3/4 cup water
3/4 cup oil
4 eggs
8 oz sour cream
1 cup milk chocolate chips
1 tsp vanilla

Preheat oven to 350 degrees.Grease and flour a bunt pan. Mix together cake mix, sugar, water, and oil. Beat in eggs one at a time. Stir in sour cream, chocolate chips, and vanilla. Pour in to prepared bunt pan and bake for 45-50 min.

Icing
5 tablespoons cocoa
5 tablespoons butter melted
Let cool
Add 2 cups powdered sugar
And about 1/4 cup hot water so that icing is thin but not runny
Pour over cake

Hot Fudge

2 sticks butter
3 heaping T cocoa
3 cups sugar
1 cup evaporated milk

over medium heat add ingredients in order mixing well after each.
Bring to a good rolling boil and boil for 5 min
Remove from heat and blend in 1 tsp vanilla with a mixer for 15 sec

serve immediately or refrigerate

Buttermilk Brownies (aka Texas sheet cake)

These are so yummy- I got this recipe from Linda and they are the best (melt in your mouth-truely)


Sift together:
2 cups sugar
2 cups flour
3 T cocoa

Bring to boil:
1 cup cold water
1/2 cup margerine
1/2 salad oil
add to dry ingredients beat until creamy
Add 1/2 cup buttermilk (I put 1 T lemon juice in a measuring cup and add enough milk to make 1 cup and wait a few minutes because I rarely if ever by buttermilk use 1/2 then use another 1/3 in frosting-dispose of the rest)
2 eggs
1 tsp soda
Beat thouroghly- pour into cookie sheet size pan
Bake @ 350 for 18 min (don't overbake)

Frosting;
Bring to boil
1/2 cup margerine
1/3 cup buttermilk
3 T cocoa
Pour into mixing bowl and beat in 4 cups (usually a bit more) powdered sugar
Beat until smooth and add 1/2 tsp vanilla
Spread over warm brownies

No Bake Cookies

2 cups sugar
3 T Cocoa
1/2 cup butter/marg
1/2 cup milk
dash of salt (optional)

I pre-mix sugar and cocoa first then add all together in pot. Boil ingredients rapidly for 1 min. (yes only 1 min)
Remove from heat and add already measured (having them ready is important as you have to move quickly):
1/2 cup peanut butter (i use creamy, but you could probably use crunchy?)
1 tsp vanilla
1/2 cup coconut
3 cups quick oats (sometimes a bit more)
Drop onto wax paper quickly so it doesn't cool in pan

Chocolate Brownie Triffle


1 pkg brownie mix- prepared- cooled- and cut into bite size piece
Combine:
1 pkg (3.9 oz) chocolate pudding
1/2 cup water
1 (14 oz) can sweeten condensed milk
1 (8 oz) sugar free (trust me) whipped topping thawed
Fold whipped topping into pudding mixture until no streaks remain

Layer 1/2 brownies, 1/2 pudding mixture, 1/2 12 oz whipped topping 2x.
Garnish with shaved chocolate (I heard strawberries are good too)
Refrigerate 8 hours before serving
