INGREDIENTS:
2 lb ground round steak
3/4 inch thick (about 6-8 patties)
4 tablespoons flour
2 teaspoon salt
1 teaspoon pepper
1 teaspoon paprika
2 tablespoons olive oil
2 16 oz petite diced tomatoes
1 8 oz can of tomato sauce
1 small onion sliced and separated into rings
1 cup sliced carrots
1 cup sliced celery
1 teaspoon dried thyme, crushed
Water (see recipe)
INSTRUCTIONS:
If needed cut meat into serving size pieces making sure to trim any fat. Combine flour, salt, pepper, and paprika into a baggie. Coat each piece of meat with flour mixture. In a large skillet brown meat on both sides in hot olive oil. Drain any fat remaining.
Add undrained tomatoes, tomato sauce, onion, carrots, celery, and thyme. Add enough water to just cover the meat and veggies. If a lot more liquid is needed to do this I add another can of tomato sauce and then whatever water is needed to cover everything. Bring to a boil and then reduce the heat to low for about 1 hour or till meat is tender. Serve with hot mashed potatoes. Makes 6-8 servings.
